Love Your Body with Tasty Tostadas!

On the rare occasion that I happen to be home alone for the evening, I love taking the opportunity to experiment with new, healthy recipes! 

Italian food is my biggest weakness, closely followed by Mexican. So this past Sunday I decided to combine these two loves (trying to recreate a pizza in all honesty!) and come up with an extremely tasty tostada! Oh and did I mention it's a clean eating recipe and there are only 392 calories in the whole thing?  
You know me - I was so excited to try I forgot to take a picture :P

Foodie Friday: Clean Quesadillas!

I'm trying sooo hard not to let this blog become a total foodie blog but I can't help it - I LOVE FOOD!

And trust me...you want me to share this recipe with you!

Tonight was one of those nights where I'm home alone cooking for myself, so I'd planned earlier on in the week to make a Quesadilla (a kind of Mexican pancake, I guess, for those of you that don't know!)

Let me tell you, it surpassed ALLLL expectations!

And - it was really simple! It doesn't photograph too well but it makes up for it in taste!! 


What's even better - it's 100% lean, clean and green! If you're on the TIU plan limit this to M3 :)

Ingredients (serves 2)
2 Wholewheat Tortilla Wraps
1 pot of Plain Chobani (Or another Greek Yogurt - I'm on a Cho kick)
1 Chicken Breast
Juice of 1 Lime
Cayenne Pepper
1 Red Onion (diced)
1 Red Pepper (diced)

I added Guacamole and Salsa but only because I had it to hand because I'd just finished making this week's Tastes so Good Tuesday post (which by the way is going to be incredible!)

Method

Poach your chicken for about 30 minutes, until cooked
Once cooked, shred with a knife and fork
Coat in 2-3 tablespoons of Chobani
Add Lime Juice and Cayenne Pepper to Chicken mix and stir
Heat up a flat frying pan/griddle (spray with a little 0 cal spray before)
Place one wrap on the pan and load the mixture on top
Add chopped onion and pepper
Place the other wrap on top and cook for 3-4 minutes
Flip using a plate! (the hard part but it can be done! Cover frying pan with a plate, turn the pan upside down etc)
Cook the other side for 2 minutes

Serve!!

PS - The Lime Flavour is phenomenal!

Skinny Chicken Enchiladas

My Parents have gone away this weekend so I was given the task of cooking dinner for myself, my sister, her friend and Charlie.

The obvious choice, given that it was Cinco de Mayo yesterday and my favourite food is Mexican, was to cook a Mexican dish!

I started scouring the internet for recipes and came across this recipe for Skinny Chicken Enchiladas. I loved this recipe but I knew there were some tiny modifications I could make to make it more suited to my family. So here we go :)

Ingredients (Makes 8 Enchiladas)
For the Enchiladas
- 8 Large Whole Wheat Wraps
- 4 Chicken Breasts
- 3 Bell Peppers (I used one red, one green and one yellow)
- 1 Large Red Onion
- 1/4 Cup Mexican Cheese
- 1/4 Cup 0% Fat Greek Yogurt
- 3 teaspoons of cayenne pepper
- Salt and Pepper to taste

For the Salsa
- 1/2 Cup 0% Fat Greek Yogurt
- 1/2 Cup Low Fat Cheese
- 1 Cup Salsa (Homemade or Store-Bought)

Method
Boil Chicken for 30 minutes.

Using two forks, shred chicken and place in a large bowl

Dice Bell Peppers and Vegetables.

Using Non Stick Cooking Spray, Sautée vegetables

Add Vegetables to bowl and add yogurt, cayenne pepper and salt and pepper and mix together (and don't eat all of it! IT TASTES DELICOUS!)

Make the Salsa; mix the yogurt, salsa and cheese together, place half of the mixture into the Enchilada filling and mix together

Spoon 2 tbsps of Enchilada mix onto wrap (and preheat your oven to Gas Mark 6 or equivalent)

Roll up your wraps, spray a baking tray with non stick spray and place the Enchiladas in.

Spoon the remaining Salsa over the Enchiladas and spread out

Cook for 25-30 Minutes and Serve!!

Let me know if you try these! They went down a hit with everybody! They were sooooo good!

Recipe: Mexican Prawn Cocktail - Under 105 Calories per serving!

I know what you're thinking. Mexican. Cocktail - Less than 105 calories? Never!

But it can be done. Mum and I proved it on Saturday night!

We had a little Mexican style dinner party on Saturday night and Mum and I put together this recipe for a Prawn Cocktail. I'm not one for Prawn Cocktail's in general but I LOVE Mexican food so I was more than happy to come up with an alternative with my mama! We worked out the calories by entering the ingredients into My Fitness Pal and it turned out at 104.8 cals per serving! I could not believe it! It was so filling as well - and it was our starter! I reckon if you changed the serving size a little it could easily be a main! 

Bare in mind this recipe serves 10 so adjust accordingly!! (Divide ingredients by 5 if you need it for 2 people etc). Do not be put off by the amount of ingredients - most authentic Mexican food will be like this. A lot of it is general things you'll have in the house anyway :)

Ingredients
For the Sauce
  • 500ml Tomato Juice
  • 2 tbsp Tomato Ketchup
  • 50ml Orange Juice (Carton or Zest) 
  • The Juice of 3 Limes
  • 1 tbsp Grenadine Syrup
  • 9 teaspoons Worcestershire Sauce (Lee & Perrins is best)
  • 25ml Tequila
  • Tobasco to taste (optional)
  • Salt and Pepper to season
For the Filling 
  • 300g Shrimp
  • 300g Scallops
  • Half an average size avocado (sliced)
Cilantro to garnish

Method
  • Mix the ingredients to make the sauce together in a jug and stir. 
  • Stir in the scallops to the liquid and leave in the fridge for a minimum of an hour to allow the citrus to begin cooking the scallops (magic huh!). The longer in the fridge the better,  in my opinion! 
  • When ready, stir in the prawns and avocado 
  • Serve in cocktail glasses (or Plastic Wine Glasses if you're like us!)
These are a great dinner party find - everyone at our house loved them! They went down a treat.

And at under 105 calories - I'd say they're definitely Tone It Up approved!
