Recipe: Spicy Chicken Tray Bake with Roasted Vegetables

Hi everyone!! I feel like I haven't blogged in forever!! Today I'm going to share a recipe with you that I actually cooked for my family last night! It tasted delicious and is perfected if you like a bit of heat in your food!

The pictures from a food website!! But it shows Roasted Vegetables and Chicken :P!


Ingredients (Serves 4)
4 Chicken Breasts
3 Cloves of Garlic
1.5 tablespoon garam masala (spice)
2 teaspoons ground tumeric (spice)
2 x 5cm chunks of fresh ginger
1 x 500g tub of low fat natural yogurt
An assortment of vegetables (peppers, garlic, tomatoes, zucchini, eggplant etc)

(if you have no garam masala/tumeric, a spice mix will do perfectly!)

Method

  • Add 5 tablespoons of natural yogurt into a medium mixing bowl
  • Peel and finely grate the ginger and garlic. Put half of the ginger aside and put the remaining ginger and garlic into the bowl of yogurt
  • Add the garam masala, tumeric, a pinch of salt and pepper to the yogurt and mix everything together
  • Cut the chicken into bite size chunks and mix into the bowl
  • Cover the chicken in the marinade and leave in the fridge until later (prepare the chicken in advance for maximum flavor - the longer the marinade the better!)
  • When the time comes to cook, place the chicken into a tray and bake for 30 minutes (or until the chicken is cooked through)
  • For the vegetables, dice and prepare whatever vegetables you want (as you would normally), spray a little 0 cal oil spray into another baking tray and add whatever spices you like - I love a bit of spice so any spice mix is perfect. 
  • Roast the vegetables until done and serve!!
