I know what you're thinking. Mexican. Cocktail - Less than 105 calories? Never!
But it can be done. Mum and I proved it on Saturday night!

Bare in mind this recipe serves 10 so adjust accordingly!! (Divide ingredients by 5 if you need it for 2 people etc). Do not be put off by the amount of ingredients - most authentic Mexican food will be like this. A lot of it is general things you'll have in the house anyway :)

Ingredients
For the Sauce
- 500ml Tomato Juice
- 2 tbsp Tomato Ketchup
- 50ml Orange Juice (Carton or Zest)
- The Juice of 3 Limes
- 1 tbsp Grenadine Syrup
- 9 teaspoons Worcestershire Sauce (Lee & Perrins is best)
- 25ml Tequila
- Tobasco to taste (optional)
- Salt and Pepper to season
For the Filling
- 300g Shrimp
- 300g Scallops
- Half an average size avocado (sliced)
Cilantro to garnish
Method
- Mix the ingredients to make the sauce together in a jug and stir.
- Stir in the scallops to the liquid and leave in the fridge for a minimum of an hour to allow the citrus to begin cooking the scallops (magic huh!). The longer in the fridge the better, in my opinion!
- When ready, stir in the prawns and avocado
- Serve in cocktail glasses (or Plastic Wine Glasses if you're like us!)
These are a great dinner party find - everyone at our house loved them! They went down a treat.
And at under 105 calories - I'd say they're definitely Tone It Up approved!

On a side note - I used my new camera to take these pictures - I'm in love with it! Such great quality! I also lost 3lbs this week which I'm ECSTATIC about!
