Recipe; Light Italian Sausage and Fennel Pasta

I realise that it's been agesss since I posted a recipe but I'm making up for lost time with one of my all time favourites! For me, Italian food is filled with Summer memories and this dish is a great winter warmer! It's the best of both worlds! This recipe is one my mum and I have adapted from the original which we found on BBC Good Food, if you search for Sausage and Fennel pasta you'll find it, however this is a much lighter version!

Ingredients
Yields 4 Servings
- 1 Packet of Weight Watchers Sausages
- 5 Handfuls of Wholewheat Pasta
- 2 teaspoons of Fennel Seeds
- 5 Cloves of Garlic
- Pinch of Chilli Flakes
- 1 Jar of Passata (or 450g of Tinned Chopped Tomatoes)
- Non-Stick, 0 cal cooking spray

Method
Remove Skin from Sausages and Chop into Chunks

Spray a large pan with non-stick and sautée sausages until browned and remove from pan.


Finely chop Garlic (or mince if you prefer) and add to pan alongside fennel seeds and chilli flakes.


Sautée for a few minutes.


Add Passata or Tinned Tomoatoes to pan and put the sausages back in, allow to simmer for at least 20 minutes or until sauce has thickened.

Cook Pasta according to package instructions


Serve with a little grated parmesan and enjoy!!
