Chilli Lime Chicken Quinoa

So recently I've found myself craving Quinoa. Better than craving chocolate I suppose! In my head I've been substituting Quinoa for anything and everything in hundreds of recipes. 

It came to lunch time yesterday and I was running late for work. I needed something quick (like need to be out of the front door in 25 minutes quick) and easy to cook with whatever I had in the cupboard.

That is how this recipe came about and let me tell you, it is the best Quinoa dish I've made to date!

It's really simple.

Ingredients (Makes 1 portion);
1/2 Cup Quinoa
1 Cup Water + Chicken Oxo Cube (Chicken Broth)
1 Small Onion (Red or White) or 4 Scallions
1 Portion of Cooked Chicken (Pre-Cooked, Flavoured, Fresh - whatever you like!)
Lime Juice to taste
Cayenne Pepper to taste
Handful of Nuts + Seeds
Cooking Spray


Method
  • Bring Water and Stock cube to a Boil 
  • Throw in Quinoa and Lime juice to taste. 
  • Simmer for 10-15 minutes (Until all liquid has been absorbed)
  • Whilst Quinoa is cooking, dice Onion.
  • Spray frying pan with cooking spray and 'fry' onions for 4-5 minutes
  • Empty Onions in to the bowl you're going to serve in.
  • In the same pan, toast nuts/seeds for 2 minutes (they'll jump - be careful!)
  • When finished, put those and the diced chicken in to the bowl.
  • Microwave the bowl for 2 minutes to heat chicken and keep onions/seeds warm!
  • Once quinoa is cooked, drain and add to bowl.
  • Season and add cayenne pepper
  • Mix it all up and voila!!
