Recipe: Sweet Pepper Pasta with Turkey, Spinach and Peppers

My parents were in Venice this past weekend and left me in charge of the house! I enjoyed it and there were no parties or fires - don't worry! (I also know my Mum is likely to read this hehe)

However with that responsibility came cooking dinner and I was so excited to have the kitchen to myself for a few days!

On Monday I found myself in a supermarket looking for inspiration for a pasta dish - Pinterest for once, was no use! In the produce aisle I found a deal on peppers (bell peppers, sweet peppers or whatever you may call them!) and settled on cooking Sweet Pepper Pasta sauce with some spinach and turkey! 

I was inspired by a dish my local Italian restaurant always makes for me and I'm so pleased I was able to make my own! It was absolutely delicious too!! And I have to say, there is something so rewarding about cooking your own pasta sauce!



Ingredients (Serves 2)
For The Pasta Sauce
2 Red Peppers
1 red Onion
Herbs to taste
500g passata

The Other Ingredients
2 Turkey Breasts
1 Red Onion
1 Red Pepper
1 Yellow Pepper
2 Handfuls of Spinach
1 clove of Garlic
2 person serving of  your favourite wholemeal pasta (everyone has different measures hehe!)

Method
For the Pasta Sauce
♥ Spray a baking tray with some cooking spray, cut the onions and peppers in to chunks, place in to the tray and roast for 30 minutes

♥ Allow the veggies to cool down before blending until the sauce is thick. Stir in the passata and season to taste!

To Finish
♥ Cook your pasta in a separate saucepan according to packet instructions

♥ Cut the turkey into strips and begin to cook on a low heat under the grill. 


♥ Chop up the remaining peppers and onions and place in to your pasta sauce 


♥ After the turkey has been grilling for about 5-10 minutes (it wont be fully cooked - don't panic this is fine!) put it in the pasta sauce to absorb flavour and finish cooking


♥ Mash your garlic and put it in to the sauce


Just before you are about to serve, add in your spinach

And voila! I hope you enjoy! Or as the Italians say - buon appetito
