Blueberry Yogurt Perfect Fit Cookies!

Now normally when I have one day off of uni/work I go a little baking crazy. So having had the whole of the last week off I am amazed I made it to today before I got measuring cups out!

Today is the third snow day and I am for sure starting to go a little crazy. I need to get outside!! Also after six and a half weeks off of uni, I SO need to go back tomorrow but it's looking unlikely as my car is buried under a foot of snow! Praying for an overnight miracle!

Anyway, as I've been stuck inside all day for three days my Pinterest addiction has gone in to overdrive. (Follow me - georgietoningup) I have literally spent hours over the last few days organising boards, creating new boards, getting new pins, organising my non existent wedding etc - you get the picture!

On Friday I came across THIS recipe for Blueberry Yogurt Cookies. I was attracted as the Pin caption said that there was no oil or butter in the recipe. 

I then saw that the recipe yielded 48 cookies and there was no way that I needed or would eat that many so I halved it - obviously you can adjust accordingly.

I then followed the above recipe, although my oven took 15 minutes longer (25 mins total baking time) than stated but that is no surprise for my oven!

The other adjustments I made were;

- 1/2 Cup All Purpose Flour + 1/2 Cup Perfect Fit Protein (instead of 1 cup flour for 24 cookies)
- 3 tablespoons of egg whites instead off 1 egg
- 1/4 Cup of Sugar and 1/4 Cup of Half and Half Sugar (Stevia+Sugar) instead of 1/2 cup of sugar.
- NO frosting!

Now my cookies were not crispy - so dont expect them to be! Although they have all been gobbled up already so it doesn't seem to matter!
