Last night was one of those nights where I was home alone, cooking for myself; AKA my favourite kind of night! I was thinking about what I was going to make alllll day at work!
I has scoured Pinterest in the morning quickly and was inspired by this recipe but decided to throw some stuff together! I obviously made one serving but it can easily be adapted!
Ingredients
- 1 chicken breast
- 1 1/2 cup of the veggies of your choice! (I used zucchini and pink onion)
- Hummus (homemade/store bought/whatever flavour you like!) - its hard to say how much but I would say make sure you have at least a 1/4 cup at home
- 1 lemon
- 1 tsp Paprika (optional!)
Method: Prep Time: 10 mins, Cook Time: 25-30 mins
- Preheat oven to 450f
- Cut all of your veggies up as you would like
- Spray a pan with non stick spray
- Layer veggies on the bottom of the pan
- Season with Pepper
- Coat chicken breast with hummus (think spreading butter on bread)
- Lay chicken breast on top of veggies
- Use the juice of one lemon and pour over the chicken and veggies
- Sprinkle over the dash of paprika
- Bake for 25-30 minutes until cooked!
That's it! Super easy, super quick! Hope you enjoy! :)
