Peppermint Patty Whoopie Pies!
Alyssa says: "I grew up with my Mom making Whoopie Pies every holiday season & I was so excited to make a healthier version of this family favorite! The cookie part is moist like cake and the frosting is perfectly minty, just like Mom would make!"
Here's the recipe...
Cookie Batter
In a blender, combine the following:
1 Banana
1 Egg
2 tbsp Maple Syrup
2 tbsp Chocolate Almond Milk
2 tbsp Cocoa Powder
2 scoops Chocolate Perfect Fit
1/2 tsp Baking Soda
1/2 tsp Baking Powder
1 oz Unsweetened Chocolate
1 tsp Maca Powder (optional)
Pinch of Salt
Frosting
1 scoop Chocolate Perfect Fit
2 tbsp Cocoa Powder
1 packet of Truvia
1 tsp Peppermint Extract
4 tbsp Chocolate Almond Milk
2 tbsp Coconut Oil; Melted
2 tbsp Maple Syrup
Drop cookie batter onto a parchment paper lined baking sheet and bake at 350° for 10-12 minutes. Let cookies cool and then sandwich frosting between 2 cookies and cover in mint candies. Recipe will make 5 Whoopie Pies. Store in the fridge or freezer to keep cool and enjoy!
