On the rare occasion that I happen to be home alone for the evening, I love taking the opportunity to experiment with new, healthy recipes!
Italian food is my biggest weakness, closely followed by Mexican. So this past Sunday I decided to combine these two loves (trying to recreate a pizza in all honesty!) and come up with an extremely tasty tostada! Oh and did I mention it's a clean eating recipe and there are only 392 calories in the whole thing?

Here's the recipe - enjoy!
Serves One
Ingredients
- 1 Wholewheat Tortilla
- 1 shredded Chicken/Turkey breast (up to you! I've used a turkey breast for nutrition info)
- 1 red pepper
- 1 yellow pepper
- 1 red onion
- 2 tbsp Greek yogurt
- Tone it Up Taco Seasoning
- 100g Passata/Sieved Tomatoes
Method
- Pre-heat oven to medium temperature
- Lightly toast the tortilla for no longer than two minutes - just to crisp the base a little
- Mix two teaspoons of the taco seasoning into Passata
- Spread the Passata mix over the tortilla using a spoon
- Apply other toppings bar Greek yogurt according to taste
- Bake for 10-12 minutes until crisp
- Drizzle Greek Yogurt over the top
- Serve!

Looks yum! Which tortillas do you use? There don't seem to be many wholewheat ones around x
