Lighter Pasta Carbonara

If you've been following my blog, you know that it's no secret that I'm obsessed with Italian food. Behind Mexican, it's my absolute favourite. I just wish it didn't have to be so inconsistent with a clean-eating diet! That being said, I'm constantly experimenting with ways to make Italian food slightly cleaner. This time round it's the creamy favourite: Carbonara! Perfect for those cosy fall evenings!

Ingredients (Feeds 4)
400g Chicken/Turkey breast
400g Wholewheat Pasta
5 rashers Turkey Bacon
1/4 Cup Reduced Fat Cheddar Cheese
1.5 Cup Greek Yogurt
3/4 Cup of skimmed milk
1 tablespoon Plain Flour
Cooking Spray
Method
1. Boil pasta according to packet instructions
2. Spray a skillet with non-stick spray and dice chicken/turkey and cook on skillet until golden
3. Dice bacon and cook on skillet
4. In a large saucepan, bring milk to a boil before adding Greek yogurt
5. Add the flour to thicken
6. Add cheese slowly, stirring in
7. Add meat to pasta sauce
8. Serve and enjoy!

Let me know what you think!
