Clean Homemade Turkey Meatballs with Zucchini Pasta

I've said it before and I'll say it a thousand times over, Italian food is one of my biggest weaknesses. I have so many good memories associated with Italian food I just can't not eat it. Which is fine ;)

This weekend I was faced with the task of cooking dinner for my boyfriend and I. Whilst our tastes are similar, our goals are not so I had to adapt the recipe to fit us both. I cleaned up a family favourite meatball recipe and used wholewheat pasta for him and zucchini noodles for me!

It went down a storm...and the leftovers tasted great on Sunday for lunch at work ;)

Meatballs - Serves 2, 4-5 Meatballs per person depending on size!

200g lean ground turkey
1 Egg
1/4 cup wholewheat bread crumbs
1/4 cup cilantro - chopped finely
1/8 cup parmesan cheese - grated
1 garlic clove - minced
Salt and Pepper to taste

Pasta Sauce

2 Cans of Chopped Tomatoes
4 garlic cloves - minced
2 teaspoons of oregano
Optional: 1 teaspoon of chilli powder

Zucchini Noodles

1 Zucchini per person
Salt and Pepper to taste

Method

  1. Combine all meatball ingredients with a large bowl, breaking up the mince as you put it in
  2. Mix ingredients using your hands! (It makes all of the difference I promise)
  3. Form meatballs using hands and set to one side
  4. Heat a large pan on medium heat, using a non stick spray
  5. Place meatballs in pan, turning until brown
  6. Add all ingredients required to make the pasta sauce and lower heat, allowing to simmer for as long as possible
  7. Using a spiralizer or julienne peeler, peel zucchini until you can see the seeds (do not use the seeded part for your pasta as it does not cook very well)
  8. Heat a separate pan and add zucchini, tossing constantly to prevent burning - season as required
  9. Serve and enjoy!
