Spinach and Chickpea Curry from Emma's Little Kitchen
This is probably my favourite recipe I have cooked all semester. It was so good every time I had it. The recipe is also super easy and totally Tone It Up approved! The biggest reason I love it is because one of the things I miss most about home is my Mum and my Nan's curries! With this recipe I'm able to have a little piece of home out here in the desert!
Angel Hair Pasta Bake from A Mom's Taste
This has been a staple in my meal plans. I use whole wheat pasta and add 1/4 cup of lemon juice (or juice from 1 lemon) for an amazing twist! I'm able to cook it up and have multiple portions frozen ready to go! It's quick and easy and has become one of my favourites.
Sweet Potato, Kale and Black Bean Quesadilla from Cookie Monster Cooking
I love Mexican food. It is my absolute favourite and it's been difficult to find recipes that are suitable for one that I didn't need to go and buy a huge amount of ingredients for! This recipe was great and so enjoyable! I switched out the flour tortillas for whole-wheat wraps to make it a little cleaner but it still packed a punch full of flavour!

Since this update, I have made sure I never run out of these chickpeas! They're a perfect snack and all of my roommates love them too!
